Rice With Peas (Risi E Bisi)
|Olive oil||3 Tablespoon|
|Ham||1⁄4 Pound, chopped|
|Chicken stock||5 Cup (80 tbs)|
|Shelled peas||1 Pound|
|Cream||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
Saute the chopped onions in the butter or margarine and olive oil until transparent.
Add the rice and mix thoroughly.
Stir in the ham.
Mix in the stock and bring to a boil.
Add the peas, cover and cook over a low heat for about twenty minutes or until rice is cooked and the stock is absorbed.
Before serving, mix in the cream, half the cheese and a little butter or margarine.
Sprinkle with the remaining cheese.
