Peach-Blueberry Rice

Ingredients
  Uncooked long grain white rice 1 Cup (16 tbs)
  Water 1 3⁄4 Cup (28 tbs)
  Scallions 2 , minced
  Minced fresh parsley 2 Tablespoon
  Dried mint leaves 1 Teaspoon
  Minced ginger root 1 Teaspoon (Fresh)
  Grated lemon rind 1⁄2 Teaspoon
  Ground cinnamon 1 Pinch
  Ground cloves 1 Pinch
  Plain non-fat yogurt 3 Tablespoon
  Brown sugar 1 Teaspoon, firmly packed
  Peach/Nectarine 1 Large, chopped
  Blueberries 3⁄4 Cup (12 tbs) (Fresh Or Thawed frozen)
Directions

Place rice and water in a medium saucepan.
Bring water to a boil.
Reduce heat to simmer, cover, and cook for 25 minutes or until rice is tender.
Drain rice.
Toss rice with scallions, parsley, mint, gingerroot, lemon rind, cinnamon, cloves, yogurt, brown sugar, peach or nectarine, and blueberries.
