Fried Meat Rice

Ingredients
  Cooked and drained rice 4 Cup (64 tbs)
  Oil 4 Tablespoon
  Julienne cut roast pork/Cooked chicken 1 1⁄2 Cup (24 tbs)
  Chopped scallions 3⁄4 Cup (12 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Eggs 2 , beaten
  Finely chopped parsley 1⁄2 Cup (8 tbs)
  Soy sauce 2 Tablespoon
Directions

Cook the rice the day before you want to use it and refrigerate overnight.
Heat the oil in a deep skillet.
Cook the rice in it, stirring steadily and pressing out any lumps, until lightly browned.
Add the pork or chicken, scallions, salt and pepper.
Cook 1 minute, stirring constantly.
Make a hollow in the center and pour eggs into it.
Stir until they begin to set, then mix into the rice mixture.
Blend in the parsley and soy sauce.
