South of the Border Rice
|Olive oil||2 Tablespoon|
|Onion||1 Medium, chopped|
|Garlic||1 Clove (5 gm), minced|
|Brown rice||2 Cup (32 tbs)|
|Tomatoes||2 Medium, peeled and chopped|
|Water||4 Cup (64 tbs)|
In a medium skillet, heat olive oil and add onion and garlic.
Add rice and tomatoes.
Cook over medium heat, stirring constantly, for 3 minutes.
Add water and salt, bring to a boil, and then reduce heat.
Cover, and cook for 20 to 30 minutes until rice is dry and fluffy.
