This South Of The Border Rice makes a sumptuous and delicious meal ! Making this South of The Border Rice takes lesser time than reading its name ! :) Try out this Mexican dish for your weekend party and tell me if you like it!
  Olive oil 2 Tablespoon
  Onion 1 Medium, chopped
  Garlic 1 Clove (5 gm), minced
  Brown rice 2 Cup (32 tbs)
  Tomatoes 2 Medium, peeled and chopped
  Water 4 Cup (64 tbs)
  Salt 1 Teaspoon

In a medium skillet, heat olive oil and add onion and garlic.
Saute lightly.
Add rice and tomatoes.
Cook over medium heat, stirring constantly, for 3 minutes.
Add water and salt, bring to a boil, and then reduce heat.
Cover, and cook for 20 to 30 minutes until rice is dry and fluffy.
