Egg Fried Rice
|Chinese mushrooms||3 (Soaked In Hot Water For 30 Minutes)|
|Spring onions||3 , finely chopped|
|Green peas||1⁄2 Cup (8 tbs), shelled|
|Parsley||2 Tablespoon, finely chopped|
|Soya sauce||1 Tablespoon|
|Peanut oil||1⁄2 Cup (8 tbs)|
Drain dry and dice mushrooms.
Beat eggs with pinch of salt.
Heat oil in a fry pan, add spring onions and eggs, stir well till eggs have set, remove and keep aside.
Fry mushrooms, peas in the same oil for 5 minutes, add rice, soya sauce, remaining salt, parsley and egg mixture.
Serve hot with meat, fish or vegetable dish.
