This holiday treat can be used in two ways,as a vegetable addition to the meal or as an unusual stuffing for the turkey.
It can be made ahead, frozen, and reheated in the oven if desired.
The large quantity makes it a versatile delicacy.
Boil rice first, set it aside in a colander.
Use a large skillet for this.
Cook country sausage thoroughly.
It will draw enough fat to saute the celery, onions, and green pepper.
When vegetables are tanned, not brown, add rice to mixture, stir well about 3 minutes.
Remove to your largest bowl.
Add beaten egg and seasonings, mix well.
Put rice in well-greased casseroles for serving or freezing.
Reheat in oven just enough so that rice is hot.
