Curried Brown Rice
|Bouillon granules||1 Teaspoon|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Water||2 1⁄2 Cup (40 tbs)|
|Chopped dried apricots||1⁄4 Cup (4 tbs)|
|Curry powder||1 Teaspoon|
|Brown rice||1 Cup (16 tbs)|
|Chopped parsley||2 Tablespoon|
Coat a medium saucepan with cooking spray.
Place over medium heat until hot; add onion, and saute until tender.
Combine onion, water, bouillon granules, apricots, and curry in a medium saucepan, cover and bring to a boil.
Cover; reduce heat, and simmer 50 minutes or until liquid is absorbed.
Stir in chopped parsley.
Transfer to a serving platter, and garnish with parsley sprigs, if desired.
