|Brown rice||1 Cup (16 tbs), 250 ml|
|Chicken consomm||2 1⁄2 Cup (40 tbs), 625 ml|
|Mint leaves||1⁄4 Cup (4 tbs)|
|Parsley||1⁄4 Cup (4 tbs), 60 ml|
|Natural yogurt||3⁄4 Cup (12 tbs), 190 ml|
Place the butter in an 8-cup (2 L) microwave-safe dish and melt 1 minute at HIGH.
Add the onion, stir until well coated with the butter.
Microwave 2 minutes at HIGH, stir.
Add the brown rice, chicken consomme, mint and parsley.
Cover and microwave 45 to 50 minutes at MEDIUM-LOW.
When cooked, add the yogurt, salt and pepper to taste.
Stir with a fork.
