Minty Rice

Ingredients
  Butter/Margarine 3 Tablespoon
  Onion 1
  Brown rice 1 Cup (16 tbs), 250 ml
  Chicken consomm 2 1⁄2 Cup (40 tbs), 625 ml
  Mint leaves 1⁄4 Cup (4 tbs)
  Parsley 1⁄4 Cup (4 tbs), 60 ml
  Natural yogurt 3⁄4 Cup (12 tbs), 190 ml
  Salt To Taste
  Pepper To Taste
Directions

Place the butter in an 8-cup (2 L) microwave-safe dish and melt 1 minute at HIGH.
Add the onion, stir until well coated with the butter.
Microwave 2 minutes at HIGH, stir.
Add the brown rice, chicken consomme, mint and parsley.
Cover and microwave 45 to 50 minutes at MEDIUM-LOW.
When cooked, add the yogurt, salt and pepper to taste.
Stir with a fork.
Serve.
