Far East Rice

Ingredients
  Rice 1 Cup (16 tbs)
  Carrot strips 3⁄4 Cup (12 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Green onions 1⁄2 Bunch (50 gm)
  Raisins 1⁄4 Cup (4 tbs)
  Butter/Margarine 2 Tablespoon
  Water 1 Cup (16 tbs)
  Frozen peas/Green beans 5 Ounce
  Salt 1 Teaspoon
  Cashew nuts/Pecans 1⁄2 Cup (8 tbs)
  Butter/Margarine 1 1⁄2 Teaspoon
Directions

Saute rice, carrots, onion, green onions, and raisins in 2 tablespoons butter in large frying pan until vegetables just begin to brown (about 5 minutes), stirring frequently. Add water, peas or green beans, and salt. Bring to a boil, breaking up peas with a fork, if necessary. Cover, reduce heat, and simmer 5 minutes. Lightly saute nuts in11/2 teaspoons butter. Stir into rice mixture. Serve immediately.
