1. In a large pot, heat olive oil and sauté the vegetables for 2 minutes.
2. Pour water and add turmeric, ginger and salt. Stir and bring it to boil.
3. Add the rice, stir and bring it back to boil. Cover and allow it to simmer for 10 minutes.
4. Turn off the heat and allow it to sit for another 10 minutes.
5. In a serving plate, serve the pilaf with yogurt or any stew of choice.
