Fried Curd Rice And Boiled-Egg Fry

Ingredients
  Long grain brown rice 2 Cup (32 tbs) (for the curd rice)
  Yogurt 1 1⁄2 Cup (24 tbs) (diluted with little water, for the curd rice)
  Regular salt 2 Teaspoon (for the curd rice +for the Boiled Egg Fry)
  Urad dal 1 Teaspoon (1/2 teaspoon for the curd rice + 1/2 teaspoon for the Boiled Egg Fry)
  Olive oil 2 Tablespoon (1 tablespoon for frying the curd rice + 1 tablespoon for frying the boiled eggs)
  Dry red chillies 2 Gram, crushed (1 for the curd rice + 1 for the Boiled Egg Fry)
  Red onions 1 Medium, chopped finely (1/2 for the curd rice + 1/2 for the Boiled Egg Fry)
  Green chilies 4 Small, chopped finely (2 for the curd rice + 2 for the Boiled Egg Fry)
  Mustard seeds 1 Teaspoon (1/2 teaspoon for the curd rice + 1/2 teaspoon for the Boiled Egg Fry)
  Cumin seeds 1 Teaspoon (1/2 teaspoon for the curd rice +1/2 teaspoon for the Boiled Egg Fry)
  Curry leaves 10 Ounce (5 for frying the curd rice + 5 for frying the boiled eggs)
  Garlic 4 Clove (20 gm), sliced finely (2 for the curd rice + 2 for the Boiled Egg Fry)
  Water 1⁄2 Cup (8 tbs) (for the curd rice)
  Turmeric powder 1⁄2 Teaspoon (for the Boiled Egg Fry)
  Egg 2
  Curry masala powder 1 Pinch (for the Boiled Egg Fry)
  Chicken masala powder 1 Pinch (for the Boiled Egg Fry)
  Soy sauce 1⁄2 Teaspoon (for the Boiled Egg Fry) (Optional)
  Chinese seasoning 1⁄2 Teaspoon (for the Boiled Egg Fry) (Optional)
  Black pepper 1 Teaspoon (for the Boiled Egg Fry)
Directions

GETTING READY
1. Hard boil the eggs and keep aside.

MAKING
2. For the Curd Rice: In a bowl, add rice, yogurt, salt and mix well. Add water to combine it nicely.
3. In a pan, heat oil, add urad dal, cumin seeds, mustard seeds, dry red chilli, curry leaves and stir well for few minutes.
4. Add in the onions, garlic and stir for a few minutes.
5. Take 1 tablespoon of the curd rice, put it in the dry pan masala, stir it slightly and put it back in the curd rice bowl. Mix until the dry onion masala gets incorporated.
6. For the Boiled Egg Fry:Remove the outer shell of the boiled egg and cut into big cubes.
7. In the pan heat oil, add mustard seeds, urad dal, garlic, green chilies, curry leaves and stir well.
8. Stir in the onions and stir well for a few minutes, add turmeric, curry masala powder, chicken masala powder, 2 teaspoons of water and stir well.
9. Add in soy sauce, chinese seasoning and salt.
10. Lastly add the egg, black pepper powder and let it sit on medium heat for 2 minutes.

SERVING
11. Serve the fried curd rice and boiled egg fry together on a plate.
