Black Beans and Rice
|Black beans||1 Pound|
|Onion||1 Large, chopped|
|Garlic||1 Clove (5 gm), mashed|
|Green pepper||1 , chopped|
|Olive oil||2 Teaspoon|
|Ham hock||1⁄4 Pound, with fat trimmed (1 Small Sized)|
|Vinegar||1⁄2 Cup (8 tbs)|
|Cooked brown rice||2 Cup (32 tbs)|
1) Wash and soak the beans overnight in 2 quarts cold water.
2) Take a pan and heat oil in it. Saute onion (as good as raw), pepper and garlic in it.
3) Add all the other ingredients except rice and vinegar. Cook over low heat until beans become tender.
4) Add vinegar and serve the beans over rice.
