Fried Rice Cakes
|Chicken and vegetables rice||8 Ounce (UNCLE BEN'S Brand Home style Dishes)|
|Thinly sliced green onions||1⁄3 Cup (5.33 tbs) (including tops)|
|Eggs||2 Small, beaten|
|Minced fresh cilantro||2 Tablespoon|
|Soy sauce||2 Tablespoon|
|Minced fresh ginger||1 Teaspoon|
|Vegetable oil||3 Tablespoon, divided|
1 As per the package directions, prepare the rice excluding the butter.
2 Cover and refrigerate until completely chilled.
3 Stir in the remaining ingredients, except oil.
4 In a 12-inch skillet, heat 1 tablespoon oil over medium heat until hot.
6 Place 1/3 cup rice mixture into skillet for each rice cake.
7 Flatten slightly to 3-inch diameter.
8 Cook 4 cakes at a time for 3 to 4 minutes on each side or until golden brown.
9 Add more oil to the skillet if needed.
10 Serve hot.
