Traditional Chicken and Rice
|Olive oil||1 Tablespoon|
|Boneless skinless, chicken breasts||1 Pound (4 pieces)|
|Water||2 1⁄4 Cup (36 tbs)|
|Chicken rice||6 Ounce (COUNTRY INN Brand Dishes)|
|Chopped red bell pepper||1⁄2 Cup (8 tbs)|
|Frozen peas||1⁄2 Cup (8 tbs), thawed|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
1 In a large skillet, heat oil.
2 Add in the chicken and cook over medium-high heat for 10 to 15 minutes or until lightly browned on both sides.
3 Add in water, rice, contents of seasoning packet, bell pepper and peas.
4 Blend well.
5 Bring to a boil.
6 Cover and lower the heat.
7 Simmer for 10 minutes or until the chicken is no longer pink in center.
8 Remove from the heat.
9 Sprinkle with cheese and let stand covered for 5 minutes or until liquid is absorbed.
10 Serve hot.
