Grilled Vegetables and Brown Rice
|Pepper||1 Medium, quartered lengthwise (red or yellow variety)|
|Onion||1 Small, cut crosswise into 1 inch thick slices|
|Italian dressing||3⁄4 Cup (12 tbs)|
|Hot cooked brown rice||4 Cup (64 tbs) (UNCLE BEN'S Brand)|
1 Cut the zucchini lengthwise into thirds.
2 In a large resealable plastic food storage bag, place all the vegetables.
3 Add in the dressing.
4 Seal the bag and refrigerate for several hours or overnight.
5 Remove the vegetables from the marinade, reserving the marinade.
6 On a grill over medium coals, place bell peppers and onions.
7 Brush with the marinade.
8 Grill for 5 minutes.
9 Turn the vegetables over and add in the zucchini.
10 Brush with the remaining marinade.
11 Continue grilling until the vegetables are crisp-tender, for about 5 minutes, turning zucchini over after 3 minutes.
12 Remove the vegetables from the grill.
13 Cool them a bit and coarsely chop.
14 Combine with the hot rice, mixing lightly.
15 Season with salt and black pepper, for taste.
16 Serve hot.
