Cranberry Glazed Cornish Hens With Wild Rice
|Long grain and wild rice||6 Ounce (1 box, UNCLE BEN'S Brand Fast Cooking)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Slivered almonds||1⁄3 Cup (5.33 tbs)|
|Canned jellied cranberry sauce||1 Can (10 oz), divided (1 can)|
|Cornish hens||4 Pound, thawed (4 whole, 1 pound each)|
|Olive oil||2 Tablespoon, divided|
1 Preheat the oven to 425°F.
2 As per the package directions, prepare the rice.
3 Stir in celery, almonds and 1/2 of cranberry sauce.
4 Allow to cool.
5 Spoon about 3/4 cup rice mixture into the cavity of each hen.
6 Tie the drumsticks together with a cotton string.
7 On a rack in a roasting pan, place the hens.
8 Brush each hen with some of the oil.
9 Roast for about 35 to 45 minutes or until juices run clear, basting occasionally with remaining oil.
10 Meanwhile, in a small saucepan, heat the remaining cranberry sauce until melted.
11 Remove hens from the oven and carefully remove the string.
12 Spoon the cranberry sauce over hens and serve.
