Squirrel With Rice

Ingredients
  Salt To Taste
  Pepper To Taste
  Salt pork square 1 Inch
  Squirrels 2 , cut up
  Water 2 Quart
  Rice 1 Cup (16 tbs)
  Catsup 1⁄4 Cup (4 tbs)
  Onion 1⁄2 , sliced
Directions

Dice salt pork; saute in large saucepan until brown.
Add squirrel pieces; brown lightly.
Add 2 quarts water; simmer until squirrels are tender, adding addi- tional water if needed.
Add rice, catsup, onion and seasonings.
Cook over low heat, stirring frequently, until rice is tender.
