Honey Glazed Chicken With Honey Nut Rice Dressing

Ingredients
Rock Cornish Game Hens - 3 (1-1 1/2 pound size), split or halved
Butter- 1/4 cup
Honey - 1/4 cup
Ground cinnamon- 1/2 teaspoon
Ground black pepper - 1/4 teaspoon
Lemon juice- 3 tablespoons
Salt - 1 teaspoon or to taste
Strips of lemon rind and Honey Nut Rice Dressing for garnish

For the Honey Nut Rice Dressing
Onions - 3/4 cup, chopped
Celery- 3/4 cup, chopped
Butter or margarine - 1 tablespoon
Rice - 3 cups, cooked in chicken broth
Raisins - 1/2 cup, seedless
Walnuts - 1/3 cup, chopped
salt - 1/4 teaspoon
Ground cinnamon - 1/4 teaspoon
Ground black pepper - 1/4 teaspoon
Honey - 2 tablespoons
Lemon juice- 1 tablespoon
Directions

GETTING READY
1) Preheat oven to 350° F.

MAKING
2) Take a skillet and melt butter in it. Add honey, cinnamon, black pepper, salt and lemon juice to prepare the honey-butter glaze. Bring the mixture to a boil.
3) Place the Rock Cornish Hens on the rack in a shallow roasting pan. Brush with the honey-butter glaze. Bake for 20 minutes.
4) In the meanwhile take a large skillet and melt butter in it for the Honey Nut Rice Dressing. Add onions and celery. Cook over medium heat or until celery turns tender. Stir in all the remaining ingredients and cook for some more time. Turn all the ingredients into a 2 1/2 to 3-quart baking dish. Cover loosely and bake at 350° F for 35 minutes or until thoroughly done.
5) After 20 minutes and then turn the other side up. Brush that side with honey-butter glaze and bake for another 30 to 40 minutes or until chicken is tender and nicely glazed. Apply the glaze several times, especially during the last 15 minutes of cooking.

SERVING
6) Garnish with strips of lemon rind and serve with Honey Nut Rice Dressing.
