Orange Wild Rice Stuffing
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Wild rice||1 Cup (16 tbs)|
|Toasted bread cubes||3 1⁄2 Cup (56 tbs)|
|Poultry seasoning||1 Teaspoon|
|Orange rind||2 Teaspoon|
Melt butter in skillet.
Add onion and celery; cook until tender but not brown.
Stir in Tabasco.
Prepare and cook wild rice according to package directions.
Combine onion, celery, wild rice, bread cubes, seasoning and rind.
To section oranges, cut slice from top and bottom; cut off peel around and round, spiral fashion.
Go over fruit again, removing any remaining white membrane.
Remove sections; cut each section in half.
Add to wild rice mixture.
Makes approximately 7 cups or enough for an 8 to 10-pound turkey.
