PINEAPPLE CHICKEN FRIED RICE

Ingredients
  Chicken 1 Pound
  Onions 1⁄2 Cup (8 tbs)
  Carrots 1⁄2 Cup (8 tbs)
  Zucchini 1⁄2 Cup (8 tbs)
  Garlic 3 Clove (15 gm)
  Soy sauce 1 Tablespoon
  Honey 1⁄2 Tablespoon
  Sherry wine 1 Tablespoon
  Balsamic vinegar 1⁄2
  Chili paste 1 Tablespoon
  Peanut sauce 1 Tablespoon
  Scallions 4
  Canned pineapple pieces 16 Ounce
  Salt To Taste
  Black pepper To Taste
  Oil 2 Tablespoon
  Cilantro 1⁄2 Cup (8 tbs)
  Cooked basmati rice 4 Cup (64 tbs)
Directions

1. In a wok coat it with oil, saute the onions, garlic,green chili,carrots and zucchini.
2.Mix the soysauce,honey,balsamic vinegar,chill paste, to cover. Add it to the wok and check for seasoning and bring to a simmer.
3. Add the chicken and cook until chicken is tender is extremely tender.
4. Add some pineapple juice from the tin.
5. Add the cooked rice and pineapple chunks
6. Garnish with cilantro.
