Basic Coconut Rice
|Raw rice||2 Cup (32 tbs)|
|Onions||2 Cup (32 tbs), chopped finely|
|Coconut milk||4 Cup (64 tbs)|
1) Rinse the rice thoroughly and drain well.
2) In a skillet, saute the onions in the oil for 10 minutes, stirring frequently.
3) Stir in the rice, salt, coconut milk, and enough water to just cover the rice.
4) Cook, covered, over a very low heat for 20 minutes, or until the rice is tender.
5) Serve immediately on individual serving plates.
