Mayonnaise Rice Ring
|Cooked long grain white rice||5 Cup (80 tbs)|
|Cooked green peas||1 Cup (16 tbs), thawed (Fresh Or Frozen)|
|Chopped green onions||1⁄4 Cup (4 tbs) (With Tops)|
|Dry roasted peanuts||1⁄4 Cup (4 tbs), chopped|
|Diced sweet red pepper||1⁄4 Cup (4 tbs)|
|Diced sweet yellow pepper||1⁄4 Cup (4 tbs)|
|Reduced calorie mayonnaise||1⁄3 Cup (5.33 tbs)|
|Black pepper||1⁄2 Teaspoon|
|Non stick cooking spray||1 Tablespoon|
|Watercress||1 1⁄4 Bunch (125 gm), large stems removed|
1. In a large bowl, toss the rice, peas, onions, peanuts, and the red and yellow peppers. In a Cup, blend the mayonnaise with the salt and black pepper, then stir into the rice mixture.
2. Coat an 8-cup ring mold with the cooking spray. Spoon the rice mixture into the mold, pressing it down. Refrigerate for at least 2 hours. Invert onto a platter, fill with the watercress, and decorate with vegetable flowers.
