Mayonnaise Rice Ring

Ingredients
  Cooked long grain white rice 5 Cup (80 tbs)
  Cooked green peas 1 Cup (16 tbs), thawed (Fresh Or Frozen)
  Chopped green onions 1⁄4 Cup (4 tbs) (With Tops)
  Dry roasted peanuts 1⁄4 Cup (4 tbs), chopped
  Diced sweet red pepper 1⁄4 Cup (4 tbs)
  Diced sweet yellow pepper 1⁄4 Cup (4 tbs)
  Reduced calorie mayonnaise 1⁄3 Cup (5.33 tbs)
  Black pepper 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Non stick cooking spray 1 Tablespoon
  Watercress 1 1⁄4 Bunch (125 gm), large stems removed
Directions

1. In a large bowl, toss the rice, peas, onions, peanuts, and the red and yellow peppers. In a Cup, blend the mayonnaise with the salt and black pepper, then stir into the rice mixture.
2. Coat an 8-cup ring mold with the cooking spray. Spoon the rice mixture into the mold, pressing it down. Refrigerate for at least 2 hours. Invert onto a platter, fill with the watercress, and decorate with vegetable flowers.
