Basic Cooked Rice

Ingredients
  Rice 2 Cup (32 tbs)
  Cold water/Chicken stock or canned broth 14 Tablespoon
Directions

1. In a large saucepan, combine the rice and enough water to cover. Rub the rice between your hands a few times. Drain well in a colander. Repeat this procedure 2 more times. Return the rice to the pan and then add the 1 3/4 cups plus 2 tablespoons water (or chicken stock). Set aside to soak for 2 hours before cooking.
2. Place the saucepan over high heat and bring to a boil. Boil, stirring, until most of the water evaporates, about 4 minutes. The rice will still be quite hard. Reduce the heat to very low, cover and cook, stirring occasionally, until tender, about 8 minutes.
3. Fluff the rice with a fork. Serve at once or cover tightly until ready to use.
