Liver Kabobs with Rice
|Beef liver||1 1⁄2 Pound, cut in 1 inch slices (From Baby / Standard Beef)|
|Fresh mushrooms||12 Large|
|Cherry tomatoes/4 medium tomatoes, quartered||8|
|Onions||4 , quartered|
|Green peppers||2 , each seeded and cut in 8 chunks|
|Vegetable oil||1 Tablespoon|
|Hot cooked rice||2 Cup (32 tbs)|
Thread liver slices and assortment of vegetables onto four 14-inch (36 cm) skewers.
Brush with oil and broil about 4 inches (10 cm) from heat, turning frequently and brushing occasionally with oil, for about 5 minutes or until liver is cooked as desired.
Serve on bed of hot rice.
