Liver Kabobs With Rice

Ingredients
  Beef liver 1 1⁄2 Pound, cut in 1 inch slices (From Baby / Standard Beef)
  Fresh mushrooms 12 Large
  Cherry tomatoes/4 medium tomatoes, quartered 8
  Onions 4 , quartered
  Green peppers 2 , each seeded and cut in 8 chunks
  Vegetable oil 1 Tablespoon
  Hot cooked rice 2 Cup (32 tbs)
Directions

Thread liver slices and assortment of vegetables onto four 14-inch (36 cm) skewers.
Brush with oil and broil about 4 inches (10 cm) from heat, turning frequently and brushing occasionally with oil, for about 5 minutes or until liver is cooked as desired.
Serve on bed of hot rice.
