Curried Rice

Ingredients
  Brown rice 2 Cup (32 tbs) (Cooked)
  Apricots 1⁄2 Cup (8 tbs), chopped (Dried)
  Raisins 1⁄4 Cup (4 tbs)
  Scallions 1⁄4 Cup (4 tbs), chopped
  Green peppers 1⁄4 Cup (4 tbs), chopped
  Sesame oil 1 Teaspoon
  Walnuts 1⁄4 Cup (4 tbs) (Toasted)
  Coriander powder 1⁄4 Teaspoon
  Nutmeg 1 Dash, grated
Directions

MAKING
1) In a large bowl, mix cooked brown rice, apricots and raisins. Set aside.
2) In a skiller, heat oil, saute scallions, green peppers till they turn crispy. Add in toasted walnuts, curry powder, coriander powder, nutmeg.
3) Lastly add in the rice and dry fruits mixture, heat for a minute and mix well.

SERVING
4) Serve the Curried Rice hot.
