Microwaved Brown Rice Pilaf
|Shredded carrot||1⁄2 Cup (8 tbs)|
|Chopped leek||1⁄2 Cup (8 tbs), thoroughly washed (White Portion And Some Green)|
|White and pale green parts of leek||1⁄2 Cup (8 tbs), chopped, thoroughly washed (Use Some Green)|
|Almonds||1 Ounce, sliced|
|Instant whole grain brown rice||4 Ounce, uncooked (Fast-Cooking Variety)|
|Apricot nectar||1⁄3 Cup (5.33 tbs)|
|Dried currants/Dark raisins||1⁄4 Cup (4 tbs)|
|Dark raisins/Dried currants||1⁄4 Cup (4 tbs)|
|Dried apricot halves||4 1⁄2 Ounce, thinly sliced (6 Pieces)|
1. In a 2-quart microwavable casserole, put together vegetables, almonds, and margarine and cook on High for 1 minute.
2. Add rice, apricot nectar and 1 cup water; cover and cook on High for 4 minutes.
3. Add fruits, stir, cover and cook on Medium for 5 minutes; stir once in between cooking.
4. Let it stand covered for 5 minutes.
5. Fluff rice with a fork.
6. Serve immediately.
