Microwaved Brown Rice Pilaf

Ingredients
  Shredded carrot 1⁄2 Cup (8 tbs)
  Chopped leek 1⁄2 Cup (8 tbs), thoroughly washed (White Portion And Some Green)
  White and pale green parts of leek 1⁄2 Cup (8 tbs), chopped, thoroughly washed (Use Some Green)
  Almonds 1 Ounce, sliced
  Margarine 2 Teaspoon
  Instant whole grain brown rice 4 Ounce, uncooked (Fast-Cooking Variety)
  Apricot nectar 1⁄3 Cup (5.33 tbs)
  Dried currants/Dark raisins 1⁄4 Cup (4 tbs)
  Dark raisins/Dried currants 1⁄4 Cup (4 tbs)
  Dried apricot halves 4 1⁄2 Ounce, thinly sliced (6 Pieces)
Directions

MAKING
1. In a 2-quart microwavable casserole, put together vegetables, almonds, and margarine and cook on High for 1 minute.
2. Add rice, apricot nectar and 1 cup water; cover and cook on High for 4 minutes.
3. Add fruits, stir, cover and cook on Medium for 5 minutes; stir once in between cooking.
4. Let it stand covered for 5 minutes.

SERVING
5. Fluff rice with a fork.
6. Serve immediately.
