Orange Rice For Duck Or Ham
|Diced celery and leaves||2⁄3 Cup (10.67 tbs)|
|Chopped onion||2 Tablespoon|
|Water||1 1⁄2 Cup (24 tbs)|
|Fresh orange juice||1 Cup (16 tbs)|
|Orange||1 , rind grated|
|Salt||1 1⁄2 Teaspoon|
|Uncooked rice||1 Cup (16 tbs)|
Melt butter in heavy saucepan.
Add celery and onion, and cook until onion is soft and golden.
Add water, orange juice, orange rind, salt, and thyme.
Bring to a boil.
Add rice slowly, stirring constantly.
Cover; reduce heat and cook for 25 minutes, or until rice is tender.
