Barley Pilaf With Mushrooms And Walnuts

Ingredients
  Olive oil 2 Tablespoon
  Chopped onions 3⁄4 Cup (12 tbs)
  Sliced mushrooms 12 Ounce (Fresh And Mixed Varieties Like White, Crimini, Portabella, Shiitake)
  Thyme 1 Tablespoon
  Garlic cloves 2 Large, minced
  Pearl barley 1⁄2 Cup (8 tbs)
  Chicken broth/Vegetable/ beef broth 2 Cup (32 tbs)
  Toasted walnuts/Toasted pinenuts 1⁄2 Cup (8 tbs)
  Grated parmesan cheese 2 Tablespoon
  Chopped parsley 1⁄4 Cup (4 tbs)
Directions

In a large skillet or sauce pan heat oil over medium heat; add onion and sauté 3-4 minutes or until softened. Add mushrooms and sauté 5-7 minutes or until starting to brown. Stir in thyme, garlic and barley and cook 1 minute. Add broth and bring to boil; reduce heat to simmer. Cover and cook for 35-40 minutes or until liquid is almost absorbed and barley is tender. Stir in nuts and cheese. Stir in parsley just before serving.
