Nice Green Rice

Ingredients
  Olive oil 1 Tablespoon
  Leek 1 , thinly sliced
  Risotto rice 12 Ounce (350 Gram)
  Vegetable stock 1 3⁄4 Pint (1 Liter)
  Broccoli 4 Ounce, cut in small (100 Gram)
  Soya beans 4 Ounce (100 Gram, Frozen)
  Frozen peas 4 Ounce (100 Gram)
  Cheddar 2 Ounce, grated (50 Gram)
Directions

MAKING
1. In a shallow pan, heat oil; add leeks and fry gently for eight minutes until soft
2. Add rice and fry gently for a few minutes until it turns transparent at the edges
3. Add stock, 300 ml each time, stir each time
4. Addd broccoli, soya bean and peas with the last batch of stock
5. When the rice and vegetables are done, add most of the cheese and the seasoning

SERVING
6. Serve in bowls and sprinkle cheese on top
