Festive Rice

Ingredients
  Chopped sweet pepper 1 Cup (16 tbs) (Red / Yellow / Green)
  Chopped onion 1⁄2 Cup (8 tbs)
  Fresh jalapeno 3 Medium, seeded and finely chopped
  Garlic 2 Clove (10 gm), minced
  Cooking oil 1 Tablespoon
  Chopped plum tomatoes 1 1⁄2 Cup (24 tbs)
  Snipped fresh cilantro 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Cooked brown rice/2/3 cup uncooked rice 2 Cup (32 tbs)
  Canned garbanzo beans 15 Ounce, drained, rinsed (1 Can)
  Shredded monterey jack cheese 4 Ounce (1 Cup)
Directions

1. In a large saucepan cook sweet pepper, onion, jalapenos, and garlic in hot oil about 5 minutes or till tender, stirring occasionally. Stir in tomatoes, cilantro, and salt. Simmer, uncovered, for 5 minutes. Add cooked rice, garbanzo beans, and 1/2 cup of the cheese, stirring gently to combine. Turn into a 1 1/2-quart casserole. Sprinkle with remaining cheese. Bake, covered, in a 350° oven for 20 minutes or till hot.
