Baked Fried Rice

Ingredients
  Minced onion 1⁄2 Cup (8 tbs)
  Oil 3 Tablespoon
  Cooked rice 6 Cup (96 tbs)
  Water chestnuts 1 Can (10 oz)
  Canned mushrooms 8 Ounce (1 Can)
  Soy sauce 1 Tablespoon
  Eggs 2 , slightly beaten
  Salt To Taste
  Pepper To Taste
Directions

Brown onion in oil.
Add cooked rice.
Chop water chestnuts and mushrooms and add.
Mix soy sauce and eggs and add to mixture.
Season to taste.
Bake at 350 degrees for 20 minutes or until eggs set.
