Chicken And Yellow Rice

Ingredients
  Onion 1 , chopped
  Fat 1 Teaspoon
  Bell pepper 1 , chopped
  Celery stalks 4 , chopped
  Chicken 1 , disjointed
  Yellow rice 3 Cup (48 tbs)
  Tomatoes 1 Can (10 oz)
  Chopped parsley 2 Teaspoon (Or To Taste)
  Salt 3 Teaspoon
  Paprika 1 Dash
  Water 3 Cup (48 tbs)
  Peas 1 Can (10 oz), drained
  Canned olives 10 Ounce, drained (1 Small Jar)
  Pimento strips 1 Can (10 oz), drained
Directions

GETTING READY
1) Preheat oven to 350 degrees.

MAKING
2) In a skillet, put a small amount of fat and cook the onion, bell pepper and celery. Remove cooked ingredients from skillet.
3) In the same skillet, fry the chicken till it is brown and then drain.
4) In a baking pan, place the rice after washing and add tomatoes, parsley, salt, paprika, water and onion mixture. Stir well and add the fried chicken.
5) Bake for about 90 minutes at 350 degrees or till the rice is properly done.
6) Add peas, olives and pimentos and bake for another 8 minutes.

SERVING
7) Serve hot.
