Egg Fried Rice

  Rice 1 Cup (16 tbs)
  Eggs 3
  Onions 1 , cut into long slits
  Green chilies 4 , slit in the center
  Oil 4 Tablespoon
  Ginger garlic paste 1 Teaspoon
  Turmeric powder 1⁄2 Teaspoon
  Chili powder 1 Teaspoon
  Salt To Taste
  Mustard 1⁄2 Teaspoon
  Jeera 1 Teaspoon
  Cinnamon sticks 2 Medium
  Cloves 4
  Coriander 1 Teaspoon (Dhaniya Powder)
  Garam masala powder 1 Teaspoon
  Milk 3 Tablespoon

Cook 1 cup rice separately either in a rice cooker or pressure cooker/open vessel on the stove.

Add Oil in a saucepan, when hot, add mustard seeds & wait until they splutter, then add cumin or jeera. Add cloves & cinnamon sticks. To this, add ginger garlic paste, onions and green chillies and saute until the onions turn golden brown.

Add turmeric, chilli powder and salt.

Add Eggs, Milk and cover for a minute. Scramble the egg.

Add cooked rice to this mixture and remove from flame.

Garnish with coriander and serve hot with raita.

Important - Make sure the cooked rice is not starchy and the rice grains do not stick to each other.
