Tomato And Egg Fried Rice

Tomatoes, tomatoes! What I love most about tomatoes is how there are so many different kinds and colors. For example, did you know that there are tomatoes that are bluish in color?? There are also green tomatoes as well. The way you could tell if a tomato is good or not is by how firm it is. If it is lumpy, there is a good chance that it fell on the floor before. Tomatoes are high in lycopene, an antioxidant that benefits our health. They are also high in vitamin A and C, and is associated with lowering the risk of breast cancer.If you could, choose organic over non-organic. Organic tomatoes are natural in their color, and are not sprayed with chemicals.
Ingredients
  Cooking oil 1⁄2 Teaspoon
  Onion 1⁄2
  Egg 1
  Tomato 1 Cup (16 tbs)
  Rice 1 Cup (16 tbs)
  Soy sauce 1 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

1. Heat a skillet and put 1 tsp. cooking oil in it.
2. Then, put in ½ an onion and stir around.
3. Put the egg into the skillet and mix well with the onion.
4. Pour in 1 cup of tomato.
5. Place 1 cup of rice into the skillet and combine well with everything.
6. Season with a little bit of salt and pepper.
7. Pour in about 1 tsp. of soy sauce.
8. Enjoy!
