Vegetable Rice Stuffing
|Carrots||1⁄2 Cup (8 tbs), thinly sliced|
|Celery||1 Cup (16 tbs), thinly sliced|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Cooked rice||1⁄2 Cup (8 tbs)|
Combine all ingredients in 1-qt casserole; cover.
Microwave at High 1 to 3 minutes, or until celery is tender-crisp.
Stuff 2 hens loosely and microwave.
