Golden Cheese And Rice

Ingredients
  Raw white rice 1⁄2 Cup (8 tbs), washed
  Scraped carrots 3 Cup (48 tbs)
  Grated processed cheddar cheese 1⁄2 Pound (2 Cup)
  Eggs 2 , beaten
  Pepper 1⁄4 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Minced onion 2 Tablespoon
  Milk 1⁄2 Cup (8 tbs)
Directions

Cook rice as in Boiled White Rice, adding carrots the last 5 min of cooking.
Drain.
Combine with remaining ingredients, reserving 1/2 c cheese.
Place in a greased, or oiled, 1 1/2 qt casserole, and sprinkle remaining cheese on top.
Bake in moderate oven of 325°F for 50 min.
