Golden Cheese and Rice
|Raw white rice||1⁄2 Cup (8 tbs), washed|
|Scraped carrots||3 Cup (48 tbs)|
|Grated processed cheddar cheese||1⁄2 Pound (2 Cup)|
|Eggs||2 , beaten|
|Salt||1 1⁄2 Teaspoon|
|Minced onion||2 Tablespoon|
|Milk||1⁄2 Cup (8 tbs)|
Cook rice as in Boiled White Rice, adding carrots the last 5 min of cooking.
Combine with remaining ingredients, reserving 1/2 c cheese.
Place in a greased, or oiled, 1 1/2 qt casserole, and sprinkle remaining cheese on top.
Bake in moderate oven of 325°F for 50 min.
