Classic Coconut Rice

Ingredients
  Water 3 Cup (48 tbs)
  Long grain converted rice 1 1⁄2 Cup (24 tbs)
  Curry powder 1 Teaspoon
  Salt 1 Teaspoon
  Canned coconut milk 1⁄2 Cup (8 tbs)
  Toasted coconut 1⁄2 Cup (8 tbs)
  Chopped green onion 1⁄4 Cup (4 tbs)
  Dark raisins 2 Tablespoon
  Light raisins 2 Tablespoon
  Butter 2 Teaspoon
Directions

Bring water to boil in medium saucepan.
Stir in rice, curry and salt.
Reduce heat, cover and simmer until all water is absorbed and rice is tender, about 20 to 25 minutes.
Add remaining ingredients, fluffing and mixing with fork, and heat through.
Coconut Rice may be prepared in advance and refrigerated.
Bring to room temperature before reheating.
