Coconut Rice

Ingredients
  Ghee 1⁄4 Cup (4 tbs)
  Basmati rice 2 Cup (32 tbs) (Soaked In Water For 15 Minutes)
  Coconut milk 5 Cup (80 tbs)
  Salt To Taste
  Coconut 1⁄4 Cup (4 tbs), grated
Directions

1. Heat the ghee in a heavy-bottomed vessel. Stir fry the rice in it till slightly brown. Add coconut milk and bring to boil. Lower the flame and cook till done. Add salt and stand over a very slow fire till all the water is absorbed.
2. Roast grated coconut lightly and sprinkle over hot rice before serving.
