Turkey Rice Medley With Acorn Squash

Ingredients
  Margarine/Butter 3 Tablespoon
  Syrup/Honey 3 Tablespoon
  Salt 1⁄4 Teaspoon
  Ginger 1⁄8 Teaspoon
  Acorn squash 1 1⁄2 Pound, cut in half lengthwise, seeds removed (1 Medium)
  Ground turkey 3⁄4 Pound
  Chopped onions 1⁄3 Cup (5.33 tbs)
  Frozen rice medley 20 Ounce, thawed (Two 10 Ounce Packages)
  Raisins 1⁄3 Cup (5.33 tbs)
  Shredded swiss cheese 2 Ounce (1/2 Cup)
Directions

MICROWAVE DIRECTIONS:
In small microwave-safe bowl, combine margarine, syrup, salt and ginger.
Microwave on HIGH for 30 to 40 seconds or until margarine is melted; blend well.
Set aside.
Cut squash halves crosswise into 1-inch thick slices.
Arrange slices in 12x8-inch (2-quart) microwave-safe baking dish.
Cover with microwave-safe plastic wrap.
Microwave on HIGH for 5 to 10 minutes or until squash is tender, rotating dish 1/2 turn halfway through cooking.
Pour margarine mixture over squash.
Cover; let stand 5 minutes.
In 2-quart microwave-safe casserole, combine turkey and onion.
Microwave on HIGH for 4 to 5 minutes or until turkey is no longer pink, stirring and breaking up large pieces of turkey once halfway through cooking.
Drain.
Stir in rice mixture and raisins.
Microwave on HIGH for 4 to 5 minutes or until thoroughly heated, stirring once halfway through cooking.
Stir in cheese.
To serve, place 2 squash slices on each plate.
Spoon margarine mixture from squash over slices.
Spoon about 3/4 cup turkey mixture over squash.
CONVENTIONAL DIRECTIONS:
Heat oven to 375°F.
In small saucepan, combine margarine, syrup, salt and ginger.
Cook over low heat until margarine is melted; blend well.
Set aside.
Cut squash halves crosswise into 1-inch thick slices.
Arrange slices in ungreased 12x8-inch (2-quart) baking dish; cover.
Bake at 375°F. for 30 to 35 minutes or until almost tender.
Pour margarine mixture over squash; cover.
Bake an additional 10 minutes or until squash is tender.
Meanwhile, lightly grease large skillet.
Add turkey and onion; cook and stir over medium-high heat 5 to 7 minutes or until turkey is no longer pink.
Drain if necessary.
Stir in rice mixture and raisins.
Reduce heat to medium; cook 5 minutes or until thoroughly heated, stirring occasionally.
Remove from heat; stir in cheese.
Serve as directed above.
