Tranquillity Rice

Ingredients
  Nonstick vegetable oil spray 1 (Cooking Spray)
  Chopped onion 1⁄2 Cup (8 tbs)
  Canned fat free reduced sodium chicken broth 15 1⁄2 Ounce
  Water 1⁄4 Cup (4 tbs)
  Dry sherry 1 Tablespoon
  Reduced sodium soy sauce 1 Tablespoon
  Dark sesame oil 1 Teaspoon
  Hot pepper sauce 1⁄4 Teaspoon
  Uncooked brown rice 1 Cup (16 tbs)
  Chopped green onion 1⁄3 Cup (5.33 tbs) (Use Both Green And White Parts)
  Canned water chestnuts 1⁄2 Cup (8 tbs), drained and chopped
  Sesame seeds 2 Tablespoon, lightly toasted
Directions

1. Coat large nonstick skillet with cooking spray. Heat over high heat. Add onion. Cook, stirring constantly, 3 minutes or until lightly softened.
2. Add chicken broth, water, sherry, soy sauce, sesame oil, and hot sauce. Bring to boil. Stir in rice. Cover. Reduce heat. Simmer 45 minutes or until liquid is absorbed and rice is tender.
3. Remove from heat. Stir in green onion and water chestnuts. Before serving, sprinkle with sesame seeds. Garnish with green onion strips, if desired.
