Coconut Rice With Thai Flavor

This rice is very easy to make and a nice change when you are looking for a tropical flavor. Serve it with curries or grilled meats and fruit salsas. Delicious!
Ingredients
  Water 1 1⁄2 Cup (24 tbs)
  Coconut milk 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Sugar 3⁄4 Teaspoon
  Long grain white rice 1 Cup (16 tbs)
  Cilantro 1 Tablespoon, chopped
Directions

In a pot, mix together the coconut milk, water, salt and sugar. Bring to a boil.
Add the rice and bring back to a boil.
Cover and reduce heat to low. Allow rice to steam for 20 minutes.
Remove rice from heat and fluff with a fork. Add the cilantro and mix well.
Serve.
