Rice A La Grecque

Ingredients
  Sweet butter 3 Tablespoon
  Chopped onion 1
  Garlic cloves 1 Small, crushed
  Green lettuce leaves 4 , shredded
  Fresh pork sausage 2 , sliced
  Mushrooms 3 , sliced
  Tomatoes 3 , peeled, seeded and diced
  Raw rice 1 Cup (16 tbs)
  Boiling water/Chicken broth 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Freshly ground black pepper 1 Dash
  Cooked peas 1⁄2 Cup (8 tbs)
  Diced pimento 1
  Raisins 2 Tablespoon, sauteed in butter
Directions

1. Melt two tablespoons of the butter in a large saucepan and brown the onion in it. Add the garlic, lettuce, sausages, mushrooms and tomatoes. Add the rice and mix well together.
2. Add the boiling water, salt and pepper. Cover tightly and cook over low heat twenty minutes. Mix well with a fork and add the remaining ingredients. Serve with lamb or poultry, or use for stuffing poultry or veal.
