Fluffy Boiled Rice

Ingredients
  Rice 1⁄2 Cup (8 tbs)
  Salt 1 1⁄2 Teaspoon
  Boiling water 5 Cup (80 tbs)
Directions

1. Wash the rice in cold water. Add the salt to the boiling water and add the rice so slowly that the water never stops boiling. A few drops of lemon juice, or 1/2 tablespoon vinegar may be added to keep the rice snow white.
2. Simmer, but do not stir; cook the rice 15 to 20 minutes, or until a few grains lifted out on the spoon are entirely soft.
3. Pour the cooked rice into a sieve and rinse under running hot water.
4. Drain, place the sieve over a pan of simmering water, cover the rice with a cloth, until ready to serve.
