Wild Rice & Fruit Stuffing
|Wild rice||2 Cup (32 tbs)|
|Chicken stock||4 Cup (64 tbs)|
|Diced dried apricots||1⁄2 Cup (8 tbs)|
|Dried pears||1⁄2 Cup (8 tbs), diced|
|Celery||2 , thinly sliced|
|Green onions||2 , chopped|
|Savory seasonings garden blend||1 Tablespoon|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
|Parsley||1⁄4 Cup (4 tbs), chopped|
Place wild rice in large saucepan; add water to cover plus 2 cups.
Cover; let soak 2 hours.
Add stock, dried fruits, celery, onions and Garden Blend.
Cover; cook over medium heat 15 minutes.
Reduce temperature to low and simmer 1 hour or until rice puffs.
Stir in walnuts and parsley.
Serve as a side dish with turkey or Cornish hens.
To stuff birds: prepare stuffing the day before; refrigerate.
Stuff birds just before roasting.
