Pineapple Curried Rice

Ingredients
  Vegetable oil 3 Tablespoon
  Curry powder 2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Salt 1 Teaspoon
  Onion 1 Large, finely chopped
  Raisins 1⁄2 Cup (8 tbs)
  Firm tofu 1⁄2 Pound, finley diced
  Crushed pineapple 1⁄2 Cup (8 tbs), drained
  Pineapple juice 1 Cup (16 tbs)
  Cooked rice 2 Cup (32 tbs)
Directions

In a large skillet, heat vegetable oil over medium-low heat. Add curry powder, garlic and salt. Saute 1 minute. Stir in onion and saute 10 minutes.
Add all remaining ingredients except rice. Cook uncovered over medium heat until liquid is reduced.
Stir in rice and heat thoroughly.
