Sausage Fried Rice
|Sausage meat||4 Ounce (Mild Or Hot)|
|Uncooked rice||1⁄3 Cup (5.33 tbs)|
|Yellow onion||1 Small, peeled and finely chopped|
|Mushrooms||4 Medium, thinly sliced|
|Garlic||1⁄2 Clove (2.5 gm), peeled and minced|
|Fresh tomatoes/1 can of 8 ounces tomatoes, chopped, with their juice||2 Small, peeled and chopped|
|Water||1⁄4 Cup (4 tbs)|
|Black pepper||1⁄8 Teaspoon|
|Liquid red pepper seasoning||1⁄8 Teaspoon (Hot Variety)|
|Chopped parsley||1 Tablespoon|
1. Gook the sausage meat, uncovered, in a heavy 8-inch skillet over moderate heat for 3 minutes, stirring occasionally. Add the rice, onion, and mushrooms, and cook for 3 minutes, stirring frequently.
2. Add the garlic, tomatoes, water, salt, and pepper. Cover, and simmer for 20 minutes, or until the rice is tender. Stir in the red pepper seasoning and parsley, and serve.
