Brown Rice Stuffing
|Water||9 Cup (144 tbs)|
|Brown rice||3 Cup (48 tbs)|
|Celery||2 Cup (32 tbs), chopped|
|Onion||1 Medium, grated|
|Butter/Margarine||1⁄2 Cup (8 tbs) (1 stick)|
|Parsley||1⁄2 Cup (8 tbs), chopped|
|Poultry seasoning||1 1⁄2 Teaspoon|
1. Combine water and the 1 tablespoon salt in a kettle. Bring to boiling. Stir in the rice; reduce heat; cover. Simmer 45 minutes, or until rice is tender. Drain; place in a large bowl.
2. Saute celery and onion in butter or margarine till soft in medium-size skillet. Stir in parsley, the remaining 1 teaspoon salt and poultry seasoning.
3. Pour over rice; stir until mixed.
