Rock Cornish Game Hens With Filbert Wild Rice Stuffing
|Rock cornish game hens||6 , thawed|
|Wild rice stuffing||1 Cup (16 tbs) (filbert)|
|Butter||1⁄4 Pound, melted (1/2 Cup)|
|Currant jelly||2 Tablespoon|
Remove giblets from game hens and save for stuffing.
Rinse birds in cold water; drain thoroughly and pat dry.
Sprinkle the neck and body cavities with salt and fill (do not pack tightly) with Filbert Wild Rice Stuffing (recipe follows).
Close cavities securely with small metal or wooden skewers.
Place birds, breast side up with a small space between each, on a rimmed baking sheet.
Bake in a moderate oven (350°) for 60 to 70 minutes or until the leg joint moves easily.
Baste occasionally with glaze made by blending the melted butter with the currant jelly.
