Turkey, Bean, And Rice Salad
|Ground turkey||1⁄4 Pound|
|Olive oil/Vegetable oil||2 Teaspoon|
|Mild salsa||1 Cup (16 tbs)|
|Canned black beans||4 Ounce, drained, rinsed (Turtle Beans)|
|No sugar lime juice||1 Tablespoon|
|Cooked quick cooking rice||1 Cup (16 tbs), hot|
|Torn lettuce leaves||2 Cup (32 tbs)|
|Reduced fat cheddar cheese||3⁄4 Ounce, shredded|
1. In 1-quart microwavable casserole combine turkey and oil; microwave on High (100%) for 4 minutes, stirring once every 1 1/2 minutes, until turkey is no longer pink. Stir in salsa, beans, and lime juice; microwave on Medium (50%) for 1 minute until thoroughly heated. Add rice and stir to combine.
2. To serve, on serving platter arrange lettuce; top with turkey mixture and sprinkle with cheese.
