Turkey, Bean, And Rice Salad

  Ground turkey 1⁄4 Pound
  Olive oil/Vegetable oil 2 Teaspoon
  Mild salsa 1 Cup (16 tbs)
  Canned black beans 4 Ounce, drained, rinsed (Turtle Beans)
  No sugar lime juice 1 Tablespoon
  Cooked quick cooking rice 1 Cup (16 tbs), hot
  Torn lettuce leaves 2 Cup (32 tbs)
  Reduced fat cheddar cheese 3⁄4 Ounce, shredded

1. In 1-quart microwavable casserole combine turkey and oil; microwave on High (100%) for 4 minutes, stirring once every 1 1/2 minutes, until turkey is no longer pink. Stir in salsa, beans, and lime juice; microwave on Medium (50%) for 1 minute until thoroughly heated. Add rice and stir to combine.
2. To serve, on serving platter arrange lettuce; top with turkey mixture and sprinkle with cheese.
