Microwaved Orange Rice
|Chopped celery||1 Cup (16 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Water||1 Cup (16 tbs)|
|Frozen orange juice concentrate||1⁄4 Cup (4 tbs), undiluted|
|Packaged precooked rice||1 1⁄3 Cup (21.33 tbs)|
Combine celery, onion, and butter in a 1 1/2-quart casserole.
Microwave at HIGH 5 minutes or until celery is soft.
Stir in water, juice concentrate, and salt.
Microwave at HIGH 7 to 8 minutes or until boiling.
Stir in rice.
Let stand, covered, 5 to 10 minutes.
Fluff with fork before serving.
